Light and easy spring snack!
2 cans of chick peas rinsed and drained
2 tb thinly sliced shallots (one small shallot)
4 tb extra small diced colorful bell peppers
4 tb apple cider vinegar
4 tb lemon juice
1/4 c extra virgin olive oil
Combine everything but the chick peas in a bowl. Salt and pepper to taste. Toss in the chick peas and refrigerate overnight! Toss again before serving!! Enjoy!!
